The Legend of Wine ( listen )
A long time ago, a wild hunter committed a crime in the area of the Great Aletsch Glacier. He filled his pockets with crystals and, while hunting, killed not only a magnificent stag, but also a mother chamois and her kids. Then dark clouds covered the sky and a biting storm swept across the area.
When they arrived at Lake Märjelen, an old man with a long gray beard was already waiting and asked the hunter to get into his boat so that he could take him to the safe shore of the Great Aletsch Glacier. The hunter gratefully got in, but the old man steered his boat straight into the glacier. He put down the oar, stood up and turned into a huge billy goat with large horns and fiery eyes. In a deeply sad voice he asked the hunter: "Why are you destroying my kingdom, stealing my rocks and killing my loved ones?"
Then the glacier opened up and the boat and its passengers sank forever in the icy waters of Lake Märjelen. In stormy weather, the shepherds told each other over a glass of wine that evening that they had seen a man in old clothes wandering around Lake Märjelen with a weapon and a bag of provisions, looking for a ferryman who would take him to the safety of the shore of the glacier.

Cold standing time, then first alcoholic fermentation followed by second fermentation. The wine is then aged in stainless steel tanks.
